New England Clam Chowder

I pretty much loath that nearly every Halloween Party consists of a chili cook-off. I don't enjoy a bowl of chili, so I always starve at chili cook-off parties. Don't get me wrong, I like chili on fries with cheese, baked potatoes, etc., but not just alone in a bowl. Yuck. But I digress. Here's my Halloween meal tradition...a week late...but that's okay because you probably have your own Halloween meal tradition, so you can just add this one to your recipe box! :) It's yummy.
1/2 c. butter
1/2 c. flour
1 diced onion
2 cans minced clams (you can add just one can if you prefer though)
3 potatoes, cooked and diced
4-5 c. milk (to desired thickness)
salt & pepper to taste
1 can corn (optional)

Dice potatoes and boil them until they are fork tender (you can peel them beforehand if you choose, but sometimes I just leave the skin on...it doesn't bother me). Melt butter in a large pot. Sauté onions in butter. Add flour and cook briefly. Add milk and stir until smooth. Add boiled and diced potatoes. Add clams and juice from can. If you choose to add the corn, drain and the corn and add it at the end (you can also use a cup of frozen corn. Simmer and eat! I usually serve it with breadsticks or biscuits as well.
